Chicken and Dumplings

Ingredients

4 carrots, cut into 1/2 inch pieces
1/2 medium onion, diced
3 tbs flour
3 1/2 cups chicken broth
1 lb chicken cut into 1 inch pieces
Poultry seasoning to taste (its strong be careful)
2 large cans refrigerated biscuits (if you use grands get the baby grands)
1/4 cup milk
1 tbs chopped parsley, optional


Directions

Sauté carrot pieces and onion in saucepan in butter for 3 minutes until onion softens, then sprinkle with flour. Stir to combine and cook 1 minute. Stir in broth, chicken, and poultry seasoning until smooth.

Bring to a boil, then lower heat, simmering 5 minutes until thickened. Slice biscuits in half and drop on top of broth. Simmer uncovered 10 minutes, then simmer another 10 minutes tightly covered.

Remove from heat. Move dumplings to one side. Drizzle milk into saucepan along side, stir to mix. I let the chicken simmer cook longer than it says to make the chicken really tender.
