Corn Chowder

Ingredients

4 slices of bacon finely chopped, or a Tbs. of bacon drippings
1 medium onion thinly sliced
4 C. cubed potatoes (about 4 medium
4 C. fresh or frozen corn: if using frozen thaw first
¼ C. Margerine
¼ tsp. white pepper
1tsp sugar
2 1/2 tsp. salt
1 cup heavy cream
2 cups milk


Directions

In a large saucepan with cover, sauté bacon over moderate heat until golden. Add onion, potatoes and 1 cup water. Cover, bring to a boil, then simmer about 10 minutes or until potatoes are tender but not mushy. Remove cover and set aside.

In a medium saucepan with cover, combine corn, cream, sugar, and butter. Simmer, covered over low heat, 10 minutes. Add potato mixture with remaining ingredients. Cook stirring occasionally and over low heat, but DO NOT BOIL.
