Stir Fry American Style
Ingredients
1 lb. chicken
3 Tablespoons soy sauce
1 Tablespoon sherry
1/2 teaspoon ginger
3 Tablespoons oil
1 1/2 cups sliced carrots
1 1/2 cups cauliflower sliced
1 10 oz packag frozen peas
4 to 6 green onions diced
1 4oz can mushrooms drained reserving liquid
1/2 cup cold water
2 Tablespoons corn starch
1/2 teaspoon sugar optional
Directions
Combine chicken, soy sauce, sherry and ginger. Let stand 15-30 minutes.
Preheat 1 Tbsp. oil in wok at 375° (about 2 minutes)
Add carrots; stir fry for 2 minutes.
Add reserved mushroom liquid; cover and steam 4 minutes. Remove carrots.
Heat 1 Tbsp. oil; add cauliflower and peas, stir fry for 2 minutes then push up the sides.
Add onions and mushrooms; stir fry for 2 minutes and push up sides.
Heat 1 Tbsp oil; add chicken and marinade; stir fry for 2-3 minutes.
Add carrots. Combine water, cornstarch and sugar.
Stir into meat mixture and cook until thickened.
