Spicy Pineapple Scallops

Ingredients

Scallops
2 Tablespoons olive oil
1/4 cup chopped red onions
2 cloves chopped garlic
1 Serrano pepper
3 cups sweetened pineapple juice


Directions

Coarsely chop the Serrano pepper.

Heat olive oil until almost smoking. Add onion and garlic, cooking until softened.

Add the pepper and pineapple juice, raise heat to high, and bring mixture to a boil.

Cook until reduced down to one cup liquid (about 20 minutes)

Pour mixture into blender and blend until smooth. Allow glaze to cool before marinating scallops.

Marinate the scallops in the glaze for 30 minutes. (No longer or the acid in the juice will cause the scallops to cook and become tough)

Grill scallops on skewer 3 minutes per side. Glaze the scallops with remaining mixture during grilling.
