Potato Soup

Ingredients

3 cups diced cooked potatoes
2 cups milk
1 Tablespoon chopped onion
2 sprigs parsley
1 Tablespoon butter
chopped chives
1 chicken bouillion cube
1/8 teaspoon pepper
half and half


Directions

Put one cup potato and the rest of the ingredients (except chives) into blender. Mix about 1 minute.

Pour into saucepan or double boiler, with the remaining 2 cups potato and heat thoroughly over moderate heat.

Serve immediately in soup cups, sprinkled with chives.

Note: For a richer soup, stir in 1/2 cup light cream or half and half.
