Port O' Call Veal

Ingredients

1 lb. veal
2 eggs beaten
2 cups bread crumbs
5 cloves garlic finely chopped
2 Tablespoons parsley
1 Tablespoon basil
1 teaspoon oregano
2 Tablespoons parmesan cheese


Directions

Pound each veal piece between 2 sheets of wax paper until very thin.

Make a bread crumb mixture by combining all ingredients except egg and veal.

Dip veal in egg and then bread crumb mixture. Chill for 30 minutes.

Heat oil (about 2 Tbsp) until smoking. Saute veal pieces until brown, about 2 minutes each side.
