Pea Soup

Ingredients
1 bag yellow peas
ham bones
celery onion, and carrot
Directions
Soak peas overnight. Merequa: cook celery, onions, carrots in butter until soft, season with salt and pepper. Cook ham bone in a large pot of water for about 1/2 hour. Cool and skim fat. Chop any ham from the bone and put in ham stock. Add vegetab les and 3/4 of peas, cook until tender (1 hour or longer)season to taste, and add the last 1/4 of peas about 45 minutes before totally done. First cooking cooks down peas, the second addition adds bulk.
