Meatloaf Surprise

Ingredients

1 1/2 lbs. lean beef
1/2 cup chopped onion
1/4 cup bread crumbs
1 egg
1/4 cup ketchup
1 teaspoon salt
1/4 teaspoon basil leaves
1/8 teaspoon pepper

Filling;
3/4 cup water
2 Tablespoons margarine
1/2 teaspoon salt
1/3 cup milk
1 1/2 cups instant potato flakes
1 egg
1/4 cup shredded cheese (I use Velvetta cut into cubes)


Directions

Mix together meat, onion, bread crumbs, egg, catsup, salt, basil and pepper. Press half of mixture in a loaf pan. Place filling on top and top with remaining meat mixture. (I line the pan with waxed paper, then press half of the meat into bottom, and lift out, then press the remaining meat into the bottom, fill, and place the formed meat mixture on top) Filling: Boil water, margarine, and salt. Remove from heat. Add milk and egg, mix well, add potatoes and cheese. Bake 350 for 50-60 minutes.
