Low Fat Cheesecake

Ingredients

1/4 cup graham cracker crumbs
2 8oz nonfat cream cheese
1 14 oz low fat sweetened condensed milk (not evap
4 egg whites
1 egg (or egg beater)
1/3 cup lemon juice
1 teaspoon vanilla extract
1/3 cup unsifted flour
1 cup assorted fruit (I use "lite" pie filling"


Directions

Preheat oven to 300 degrees. Spray bottom and sides of 8 inch springform pan with vegetable spray. Sprinkle graham cracker crumbs evenly over bottom of pan.In a large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add egg whites, egg, lemon juice and vanilla; mix well. Stir in flour. Pour into prepared pan. Bake 50-55 minutes or until center is set. Cool; chill. Serve with fruit. 280 calories, 3 gr. fat, 45 mg cholesterol
