Lemon and Parsley Fillet of Sole

Ingredients
juice of one lemon
1/2 teaspoon grated lemon rind
3 Tablespoons diet mayonnaise
seasoned pepper to taste
1/3 cup chopped parsley
4 6 oz fillets of sole * flounder can be used
Directions
Mix together the lemon juice, rind, mayonnaisse, seasoned pepper and half of the parsley. Lightly oil a baking pan and place the fish in one layer. Cover the fish with the mayonnaise mixture. Set the pan on the lowest rack of a preheated 450 degree broiler and cook for 10 minutes. Serve garnished with lemon slices and remaining parsley. Total cooking time: 10 minutes.
