Joe Muer's Bean Salad

Ingredients

1 cup white beans (dried)
3 Tablespoons white wine vinegar
3 Tablespoons chopped parsley
2 Tablespoons finely chopped onion
1 1/4 teaspoons salt
pepper to taste


Directions

In a saucepan, combine 1 cup of beans with 3 cups water. Simmer the beans, covered over low heat, add water as it is needed to keep beans covered. for 1 1/2 hours, or until beans are tender. Let the beans cool, drain, and transfer them to a bowl. Add wine vinegar, and parsley, onions, and salt and pepper and chill covered for at least 12 hours.
