Heather's Potatoes

Ingredients

1 can cream of chicken soup
8 ounces sour cream
1/2 cup onion
1/4 cup plus 3 Tablespoons melted margerine
1 teaspoon salt
2 lbs. red potatoes
2 cups shredded cheddar cheese


Directions

cut potatoes into bite size pieces, and place in crock pot. Combine soup, sour cream, onion, 1/4 cup butter and salt and pour over potatoes. Top with stove top stuffing and cover. Cook on low 8-10 hours or high 5-6. About 3 hours into cooking stir to incorporate the stuffing mix.
