German Cheese Torte

Ingredients

1/2 cup margarine softened
1 package Zweiback crushed
1/2 cup sugar
1 teaspoon cinnamon
4 eggs
1 cup sugar
1/4 teaspoon grated lemon rind
3 Tablespoons lemon juice
2 lbs. dry cottage cheese
1 cup heavy cream
1/4 cup flour
1/2 teaspoon vanilla


Directions

Spread margarine in bottom of an 8 inch springform pan. Spread sides and bottom with zweiback mixture. Save 1/2 of mixture for top. Beat eggs ans sugar, salt, lemon rind and juice. Beat cottage cheese, add flour and cream and beat well. Mix in egg mixture, stir well. Bake at 350 for 2 hours or until top of cake cracks. Turn off heat and leave cake in for one hour.
