Dilled Bean Salad

Yield: 3 cups

Ingredients

3 cups white pea beans
2 green onions
1/3 cup olive oil
2 Tablespoons lemon juice
1/2 teaspoon salt (I would omit this)
2 teaspoons dried dillweed: I used Dilly Spice
ground pepper to taste


Directions

In a large bowl combine drained and rinsed beans and onions. Mix oil, juice, salt and dill and pepper together.

Pour over beans and toss lightly to mix. Cover and chill at least 1 hour, or up to 2 days.

Serve with roasted or grilled meats or fish.
